PersonalMy vegan journey began when I had just given birth to my second child. I had no understanding of a vegan lifestyle until I accidentally came across it while searching for information for my baby. As a nursing baby, his nutrition was directly linked to what I was consuming. It was suggested to help ease his pains by eliminating dairy. It worked! Headaches that I had been experiencing since I was a teen also disappeared.
I started digging for more dietary information and came across my first two vegan books: Skinny Bitch and The Kind Diet. Not only were these books full of recipes but the impacts of consuming animal and animal bi-products were thoroughly explained. My eyes were opened to all of the health, environmental and animal welfare implications of eating animals. That was it!
I went vegan overnight.
As an avid information seeker, I began consuming every informational book, documentary, blog and website I could get my hands on. One of the first documentaries I watched, Earthlings, made a huge impact on me regarding animal rights while Forks Over Knives put me on the road to having stellar cholesterol and overall health.
After this, I really got into cooking! I made it a personal mission to veganize all of my favorite foods. I eventually opened a vegan restaurant, where I made lifelong connections and had some amazing life experiences such as being featured in a national vegan magazine, and twice on local news. I participated in animal sanctuary fundraisers, catering events in Hawaii and incredible VegFest events.
It was a hard decision to sell my restaurant and go into real estate full-time but I am so happy with my decision and I am able to financially contribute to organizations that I care about as well as spend more time with my three kids.
I am always be vegan. It is part of my life identity and I’m happy to share my journey and knowledge, through my examples and lots and lots of love and compassion for people, animals and our environment.
